Capsaicinoids were determined using a validated HPLC
method, which allowed reliable identification and
quantification of capsaicin and dihydrocapsaicin. This
analytical method is used for compound determination
on HPLC retention time. Earlier determination of total
capsaicinoids has relied on direct measurement of
ultraviolet absorption or colorimetric method using FolinCiocalteu
