Stock solution was prepared
by adding 2.5 mg of DPPH in 100 mL of methanol (0.0625 mmol/L)
and kept at ambient temperature in a dark area. Then, a 200 lL
extract of every sample of carrot juice was mixed with 3.9 mL of
DPPH solution. A control of DPPH solution was prepared using a
combination of the DPPH solution and the same volume of methanol.
The decrease in absorbance was determined at 515 nm every
min until the reaction reached a constant level using a spectrophotometer
