The visual quality was evaluated by 4 trained judges which scored from 5 to 1 each single artichoke quarter of each replicate for its external bract and cut surfaces appearance in order to better understand the effect of pre-cutting conditions on the specific plant part. Particularly, for outer bracts score 5 was given only for product with no defects on surface; score 4 for bracts with slight browning at the base of the receptacle
