3. Results and discussion
3.1. Firmness, lignin and cellulose contents
Firmness of the shoots tended to increase steadily, with a slower
rate for HHP-treated samples (Table 1). Firmness of control samples
increased by 27.3% after 7 days of storage, which suggested
increased lignin biosynthesis, thus severely lowering customer
acceptance. There was a similar trend in firmness which increased
by 21.9% in shoots of HHP-treated shoots. However, HHP treatment
retarded the firmness increase (P < 0.01).
