Oxidative stability parameters of the oils are presented in Table 3. The specific extinctions at 232 and 270 nm, which revealed the oxidative deterioration and purity of the oils, of the EEO were almost comparable with the control, however they were lower than those of the hexane-extracted oil. The peroxide value of the EEO (0.9–1.4 millieq/kg) was found to be comparable to the control (1.3 millieq/kg), however, it was significantly (p < 0.05) lower than the HEO (1.5 millieq/kg).
The oxidative stability of EEO, in terms of measurements of para-anisidine value was also noted to be appreciably
improved relative to the HEO (Table 3).
