INGREDIENTS
2 tablespoons olive oil
1/4 cup finely minced shallots or onions
1 tablespoon tomato paste
2 cloves garlic, finely minced (about 2 teaspoons)
1/4 teaspoon crushed red pepper flakes
One 28-ounce can crushed tomatoes (Tuttorosso is a good brand) or 3 1/4 cups tomato puree (passata di pomodoro - Bionaturae organic is my favorite brand)
Fine sea salt, to taste
1/4 cup vodka
1/2 cup cream
1 pound penne pasta (or rigatoni or any other short, tubular shape)
Freshly grated Parmigiano Reggiano cheese, for serving
