Only six of these
compounds (isobutyl acetate, ethyl hexanoate, 2,3-butanedione, acetaldehyde,
butyraldehyde, and hexanal) were identified in the fermentation
media (before inoculation), while 27 volatile compounds were
identified after fermentation in the different assays. The compound
2,3-butanedione was identified only in the fermentation media.
