Water and oil binding capacity were measured with the methods of Auffret, Ralet, Guillon, Barry, and Thibault (1994) and Abdul-Hamid and Luan (2000), respectively, based on the centrifuge method. Water binding capacity was expressed as g water per g dry sample and oil binding capacity was expressed as g absorbed oil per g dry sample. Emulsion capacity was determined using a method of Yasumatsu et al. (1972) described by Abdul-Hamid and Luan (2000). Emulsion capacity index was expressed as the percentage of weight differences in samples after centrifugation. The swelling capacity of samples was determined with the method of bed volume technique described by Zhang, Bai, and Zhang (2011).
