Osmotic dehydration (OD) is a drying technology for fruits and vegetables with high water content. It has been generally considered useful as apretreatment to a subsequent stabilization process such as freezing, freeze drying, vacuumosmotic dehydration, or osmoconvective drying. OD is a gentle and effective method ofdrying that is based on the partial removal of water in fruits by immersion in concentratedsolutions of soluble solids.
