Maillard reaction to form nitrogen containing cyclic organic compounds. These types of compounds are referred to strong free
radical scavengers and inhibit free radical chain reactions. Inhibition
of these reactions reduces the formation of gases with a corresponding
increase in the DOC value, since gases are formed mainly
by free radical reactions (Kruse et al., 2007).
