(26.85%) of total chromatographic area after the HAD treatment.
The acid content increased significantly (p < 0.05) from
10.02 106 area units to 41.80 106 area units after HAD processing.
Interestingly, samples dried using MD (23.70%) and MVD
(9.21%) had significantly higher levels of nitrogenous compounds,
such as cyclooctanamine, N-Acetyl-2-pyrrolidinone, and 2-
Methylpyrazine.
