2. Materials and methods
Newly harvested paddy samples (crop year 2007) of three cultivars
– namely Sanpa-Tawng 1 (SPT1), jasmine Pathum Thani 1
(PTT1) and Leuang Pratew 123 (LPT123), grown in Chiang Mai,
Chachoengsao and Ratchaburi provinces, respectively – were obtained
from the Department of Rice, Ministry of Agriculture and
Cooperatives, Thailand. The newly harvested samples were sundried
for 2 days to reduce the moisture content from 20% to 21%
after harvest to 14% before dehulling and polishing at the Department
of Rice, Ministry of Agriculture and Cooperatives, Thailand
