The important role of transportation in the food chain should be emphasized in food safety management. Millions of tonnes of food are traded globally annually (Anonymous, 2010) and these are transported over long distances for considerable periods of time. It is estimated for instance that processed food in the United States on average travels over 2100 km, while fresh produce travels over 2400 km, before being consumed (Hill, 2008). These observations among others underline the importance of ensuring safety and preventing cross contamination during the transportation links in the food chain (Anonymous, 2003).
