The degree of hydrolysis of native starch of PPW depends on factors such as substrate concentration, type and concentration of the enzyme used, and the process conditions such as pH, temperature, etc. Firstly, the ability of each enzyme to degradePPW carbohydrates to fermentable reducing sugars was tested.
