RSA of wheat flour, DTLP and powdered cookies was carried out by DPPH method according to Blois (1958) using butylated hydroxy anisole (BHA) as standard. The DTLP was soaked in 1:10 ratio (w/v) with 1:1 mixture of EtOAc:MeOH for 8 h, with intermittent shaking at room temperature. The mixture was filtered and used for RSA analysis. Different concentrations of filtrate and BHA were placed in different test tubes in a fixed volume of 100 μl. 5 ml of 0.1 mM methanolic solution of DPPH was added and shaken vigorously. The tubes were allowed to stand at room temperature for 20 min in dark. Similarly, a control was prepared without any extract. MeOH was used for baseline correction. The changes in the absorbances were measured at 517 nm in a UV visible spectrophotometer (Genesys-5, Milton Roy,USA). RSA was expressed as percentage inhibition using the formula
