I happened upon a local kitchen preparing thali, which is a classic Indian dish. The thali would always revolve around a starchy staple like rice or a paratha, or a poori stacked in the centre and then surrounded by these wonderful little... curries and chutneys and dahl. The idea is that each flavour is tasted and appreciated individually - grab a bit of rice or bread, and then dip it into your chutney, but not to mix more than one. There's great flavour and lots of textures. It smells absolutely delicious
