Polyphenolic compounds (phenolic acids and flavonoids) are the main phytochemicals responsible for the antioxidant activity
of fruits and vegetables. The fibre concentrates obtained from exotic fruit were shown to be rich in polyphenolic compounds containing a variety of phenolic hydroxyl groups that may be responsible for the antioxidant capacity and free radical scavenging activity.
