Protein sites recognized by antibodies
are known as epitopes and can be divided into conformational epitopes,
which interact with the allergen receptors based on their three dimensional
conformation (Mills,Madsen, Shewry, & Wichers, 2003) and, continuous
epitopes,which are short peptides of 12–18 amino acid residues
of which only the primary sequence of the polypeptide is involved in
antibody binding (Soler-Rivas &Wichers, 2001).
