Acid methanol was used to extract
anthocyanins quickly and easily from various samples used
for comparisons (geranium, strawberry, red chicory, red cabbage). As regards the red sarcotesta, no red pigment was
found in the solvent, which appeared to be yellowish, and
showed a completely different run compared with anthocyanins
separated by chromatography (Fig. 4E). Spectrophotometric
analysis (Fig. 4, F and G) also revealed a completely different
pattern of absorbance for this pigment (peak at 400 nm)
compared with that of anthocyanins (maximum 500 nm)
