Palmitic acid represented more than 55% of the total SFAs in the
salty snacks. This fatty acid is found mainly in dairy foods such as
butter. Although it was expected that salty snacks with puff pastry
would have a higher amount of this fatty acid because butter is
generally used as an ingredient, high amounts of palmitic acid were also found in ham and cheese croissants, catupiry and
chicken croissants, and cream cheese and chicken croissants. This
was probably because of the use of this fat to prepare the dough
for the croissant.
