Short-grain rice
This rice has short grains has are more starchy and moist than medium and long-grain rice. There are different varieties, including pearl rice (used in Asian cooking) and Arborio and carnaroli rice (used in risottos).
Easy-cook rice
The grains in easy-cook rice are polished and partly boiled so that they are quick and easy to cook and stay fluffy and separate. Easy-cook rice is a convenient alternative to white or brow rice, but dose not have as much flavor.
