reported a synergistic inactivation effect
that increased with amplitude with ultrasound treatment in
soybean lipoxygenase buffer. These same authors showed that
hydroxyl radicals have a short half-life and that their range of action
is short but can undergo radicaleradical combination reactions to
generate hydrogen peroxide. Hydrogen peroxide is an efficient LOXinactivating
factor, even at low concentrations and at room
temperature.
