The total fructans content was 6.5 g/100 g in the symbiotic formulation and remained constant during the 28 days of product
storage. The control, probiotic, and symbiotic formulations presented total fiber content values of 3.24, 3.41 and 10.70 g/100 g, respectively. The claim of the functional fiber property is permitted,provided that its portion in the ready-for-consumption product be at least 3 g of fiber (ANVISA, 2008). The three formulations can be considered as sources of fiber products that can assist in intestine function. Thus, these formulations are an alternative option and present better nutritional value than classic desserts on the market.
