3.3. 50-Nucleotides
Table 3 showed the contents of total 50-nucleotides in
button mushroom at different stages of FD and FMVD; all of
these 50-nucleotides have also been analysed by Tsai et al.
(2007) when they studied the non-volatile taste components
of A. bisporus harvested at different stages of maturity. The
contents of total 50-nucleotide fluctuated in the range of
5.35–6.54 mg/g dry weight during the whole drying processes.
