There has been a tremendous growth in fish consumption over
the past several years, due to changes in consumer attitudes towards
health and nutrition. Increased demand for seafood can
promote adulteration/fraudulent practices. Adulteration mainly
includes mislabeling, fraud and substitution with cheaper fish.
Commercial fraud occurs when there is a mislabeling of food
product, or when there is a replacement of one ingredient with
another of low commercial value (Lockley & Bardsley, 2000). Species
substitution is one of the major mislabeling, in which low
valued species is labeled as a high valued species.
