During the harvests of 1996 and 1997 in Louisiana studiesof the industrial application of the DextranexTM preparation,dosed in mixed juice at a rate of 6 g/t of juice, with a reactiontime of 12-15 minutes were done (Clarke et al., 1997). A reductionof the dextran levels between 50 and 85% resulted, also areduction in viscosity in the pans, a decrease in purity of themolasses to normal values and the decrease of the dextrancontents in sugar crystals from 3 200 to 630-780 ppm
