The decrease in the levels of FaDOH, FaDOAc, and FaOH may be
due to several changes occurring during storage and it is difficult to
establish exact mechanism involved for the degradation of polyacetylenes.
However, a decrease could be mainly due to enzymatic
degradation and/or by some biochemical transformation among
FaDOH, FaDOAc, and FaOH. Hansen et al. (2003) concluded that
the reduction can be attributed to changes in the balance between
enzymatic degradation of falcarinol and its biosynthesis, in raw
frozen carrot. To gain a better understanding of the behaviour observed
levels of the three major polyacetylene in frozen carrot
disks were examined using the Weibull model (Eq. 2). The observed
