In this research, pectin was extracted from ripe Palmyra palm pulp as raw materials. The purposes of this research was to develop pectin extraction method without alter the extraction temperature and pH. It was found that the extraction temperature (room temperature, 80, 95 and 120°C) did not significantly affect the yield of pectin extracted from ripe Palmyra palm pulp (P>0.05). In the other hand, the pH during extraction affected the yield significantly (P≤0.05). However later experiment which compared unadjusted and pH adjusted extraction at the same temperature showed none significantly different of the yield (P>0.05). The properties of pectin including moisture content, ash content, degree of esterification and galacturonic acid content were also investigated in this research. It showed none significantly different (P>0.05). This mean that pH adjusting for pectin extraction from ripe Palmyra palm pulp was not necessary. The results suggested that pectin from ripe Palmyra palm can be extracted by water at room temperature.
