One of the cruciferous vegetables grown in Thailand especially the Southern part includes Brassica hybrid cv. Pule (or longlived cabbage). Its health benefits have been known due to its high levels of beta-caroteen, vitamin C, and riboflavin (กรมส่งเสริมการเกษตร), however there is no report of glucosinolate profiles of this vegetable and literature on its bioactive compounds is still lacking. Thus, this vegetable is chosen for our study to determine its GSL profiles and as well as its degradation ITC products upon hydrolysis.al. (2011) showed the bacterial strains varied in their ability to metabolize SNG, and this was enhanced by NaCl and/or NaNO3. The ability of tested strains to metabolize SNG, in decreasing order, was as follows: Escherichia coli O157:H7 > Staphylococcus carnosus > Staphylococcus aureus > Pediococcus pentosaceus > Salmonella Typhimurium > Listeria monocytogenes > Enterococcus faecalis > Pseudomonas fluorescens.
