Foods have to be stored in rotation of “use by” dates.

Use probe thermometers to check food temperatures.
Keep storage area free of pest infestation.
Keep ice machines free of soil and lime scale build up.
Keep separate containers provided for the transportation of ice.
Proper ice scoops have to be attached to the machine and used for scooping ice only.
All cleaning agents and chemicals have to be clearly labelled and stored separately.
Do not use anything other than the ice scoop attached to scoop ice.
Water for the ice machines must be potable and filtered.
