This was supported
by microscopic observations that the predominant
bacteria in the four tanks mostly had tetrad or
paired cocci, which is a unique characteristic of the
Tetragenococcus group of bacteria. It is quite probable
that the T. halophilus-like bacteria were the
starter IAM1676 origin for the cases of tanks No. 1
and No. 3 after 8 days of fermentation (Table 4)
