To study temperature profile within the sample and inside hot
air oven, calibrated T-type thermocouples were inserted at the
geometric center of potato slices. All the thermocouples were connected
to the data logger (VR-18, Brainchild Electronics Co. Ltd.
Taiwan) and temperature is recorded at regular intervals of 30 s
