2.4. Microgels
2.4.1. Microgel production
The microgels were produced by the extrusion method using
pure aqueous j-carrageenan solutions and mixtures of j-carrageenan
and sodium caseinate solutions (Table 1). The surface tension
of these solutions was measured using a Sigma 70 tensiometer
(KSV Instruments, Finland) at 50 C and the values are shown in
Table 1. The viscosity of the biopolymer solutions was determined
according to Section 2.4.3.3.
