Hue angle (Hab) varying from 0? to 180? has been used as an indicator of color change [45]. When Habvalues are higher than 100?, any increase in Habvalue indicates to the increase in greenness. When Habvalues are lower than 50?, any decrease in the Habvalue indicates to an increase in redness. When Habvalues are between 50? and 100?, any decrease in the Habvalue indicates to an increase in yellowness. As shown in Fig. 5, the Habvalue of broccoli was higher than 100? for all treatments indicating that green was the dominant color. When ultrasound intensity was
within 0.250–0.412 W/cm2 range, the UAF treated broccoli samples had more greenness (Hab: 132.1–146.1) compared to the samples subjected to the normal immersion freezing (Hab: 123.4).
