Ensiling is a method for preserving moist crops which ensures animal feed availability throughout the year. Silage
processing is based on lactic acid fermentation under anaerobiosis and preserves the nutritive and sanitary qualities of
the crops. However, spoilage microorganisms can occur in silage, causing degradation and losses with significant economic
impact. Silage can also be a vector for pathogenic microorganisms that threaten both animal and human health. In feedstuffs,
and especially silage, safety control must be achieved to limit animal disease and subsequent transmission to humans,
mainly through food chain contamination.
