In particular, the major
perivitellins found in P. canaliculata are ovorubin, PV2 and PV3,
oligomeric proteins that are emerging as a very efficient and complex
protection and defense system for the developing embryos. Previous
studies have focused on ovorubin, the most abundant carotenoprotein,
with multiple functions and remarkable structural characteristics such
as a thermal stability higher than 95 °C [8–11].
