In order to evaluate the efficiency of the purification process, the lipase activity and the amount of protein were measured in all the steps of the process. Table 2 shows the results that were obtained for the analysis of the samples after disintegration and purification by two different methods: precipitation with ammonium sulphate (P) and dialysis (D). The percentages recovered after the purification procedure related to that of the original activity in the sample after UD are also shown.
