It appears that as the serum concentration increased, the values
of L* and a* remained unchanged (e52 ande7.7, respectively). The
b* value seems to show a slight incremental change (Fig. 5 a). This implies that the yellow pigments, i.e. carotenoids (Chaiwanna,
1993), in the mango serum could be infused and remain in the
partially ripe mango structure. A higher concentration of mango
serum led to higher infusion of the pigments in response to
concentration-difference driving forces. However, the sensory
results of this color change showed a decline in the color acceptance
score (Fig. 5b). This could be due to the fact that the sensory
panelists disliked the unfamiliar yellow color
