In most cases, extending shelf life and maintaining
quality requires a multiple hurdle technology system, for example,
introducing temperature control as well as MAP is generally
essential to maintain the quality of packaged foods. Hurdle
technology is, therefore, important for MAP applications of
dairy products, because the modified atmosphere provides an
unnatural gas environment that can create serious microbial
problems such as the growth of anaerobic bacteria and the production
of microbial toxins.
