Table4 shows the effects of incubation temperature on the biochemical characteristics of FSBM on DM basis . The minimum pH value (5.1) and the maximum lactic acid content (189.7 mmol/kg )were obtained at 40 1C (linear and quadratic , Po0.01 ) .The minimum concentration of β- conglycinin (54.7mg/g) and glycinin (12.6mg/g) were obtained at 50 and 40 1C , respectively (linear and quadratic , Po0.01 ) . The CP content linearly decreased (Po0.01) with the increasing incubation temperature.
