In the first experiment, the samples treated with 0.1 g/100 mL
Cys (in the coating and aqueous solution) and the control samples
fell below the limit of marketability within 1 day of storage, while
those treated with 0.3 g/100 mL reached 2 days of marketability
(Fig. 3). Although the addition of Cys to the SPI:BW coating did
not significantly improve the visual quality of artichoke slices, the
samples dipped into the SPI + 0.5 g/100 mL Cys coating reached the
limit of marketability after 5 days of storage at 5 ◦C.
