The proposed four analytical methods are relatively simple,
precise and convenient for the determination of the AC of rapeseed
oils at various stages of refining process. The refining of crude
rapeseed oils from different batches caused 60% and 80% decrease
of AC and TPC, respectively. Also each step of the technological
process decreased amounts of prooxidant metals, Fe, Cu and Mn in
the studied rapeseed oils. It is noteworthy that, there are differences
in AC, total amounts of phenolics and prooxidant metals in
rapeseed oils during refining steps at different production periods.
