All living organisms have endogenous defense systems against oxidative damage, such lipid peroxidation, DNA damage and inhibition of cell communication due to reactive oxygen species. There are two main antioxidant defense mechanisms. The first one is antioxidant defense with enzymes such as superoxide dismutase which catalyses dismutation of superoxide anions to hydrogen peroxide, and catalase which converts hydrogen peroxide(H2O2) into molecular oxygen and water. The second one is antioxidant defense with non-enzymatic components, such as polyphenols, ascorbic acid, and carotenoids[9].
