INGREDIENTS
• 4 Large eggs
• 1/3 cup (about 75g) minced pork
• 6-8 small to medium shrimp, peeled and deveined.
• 1 small dry cauliflower fungus (optional)
• 1 medium size tomato, cut into thin wedges.
• 2 stalks spring onion cut into 4cm (1.5″) slices
• 2 tablespoon neutral taste cooking oil.
DRESSING
• 1 1/2 tablespoon lime juice, freshly squeezed
• 1 1/2 tablespoon fish sauce
• 1/2 teaspoon granulated sugar
• 2-6 bird’s eye chilies
METHOD
1. Soak the dried cauliflower fungus in boiling
water to rehydrate, for about 10 minutes
2. Prepare fried eggs your favorite way. I find that this dish works better when the eggs yolks are
still somewhat runny and the edges are golden brown and crispy. Feel free to use your own favorite style. Place the eggs on a serving dish.
