Psychrotrophic bacteria were determined
on PCA with 1% NaCl at 7 °C for 10 days. Brochothrix thermosphacta
was enumerated in vacuum-packaged samples using Streptomycin
sulfate/Thallium acetate/Actidione Agar (STAA) with STA selective
supplement (Oxoid, Unipath, Basingstoke, UK) and incubated at 22 °C
for 48 h. Finally, Salmonella was determined on Salmonella–Shigella
agar (SS) (Oxoid) after incubation at 37 °C for 24 h. The results were
expressed in log cfu/g. The limit of detection for Salmonella was
0.4 log cfu/g.
