Commercial UHT milk was stored at 4, 20 and 40 1C for periods up to 6 months. Overall changes in milk characteristics, proteolysis and physicochemical
properties of milk particles such as casein micelles and fat globules were investigated and correlated with the heat and phosphate stabilities of the milk.
