the end of the time pH was adjusted to 7.2 and so simulation of
gastric digestion was stopped. 2.5 mL of bile/pancreatin solution
(2 g L1 of pancreatin and 12 g L1 of bile salt in 0.1 mol L1
NaHCO3) and 2.5 mL of NaCl/KCl (120 mmol L1 NaCl and
5 mmol L1 KCl) were added to the sample and simulation of intestinal
digestion was conducted for the following 2.5 h at 37 C in
shaking water bath. The sample was centrifuged at 3500g for
10 min and the supernatant was used for determination of bioaccessible
phenolics. Bioaccessible phenolics were also determined
using Folin-Ciocalteu spectrophotometric method and expressed as
gallic acid equivalents (mg of GAE 100 g-1 DW). Bioaccessibility was
also calculated as the percentage of total phenolic content. Each
treatment was conducted in triplicate.
