The total aerobic bacteria and the yeasts and molds in cloudy and clear
juices were not detected after HHP treatments and during 6-month storage
at 4 and 25 °C, indicating that the juicesweremicrobiologically safe in
this study. This study focused on the changes of quality of the juices during
storage at 4 and 25 °C, and the analyses concerning the changes were
presented as the following.
