2.2. Fish samples
Indian mackerel (Rastrelliger kanagurta) with a weight of 0.4–
0.5 kg/fish were purchased from a local market in Songkhla province,
Thailand. The fish, off-loaded approximately 24–36 h after
capture, were transported in ice with a fish/ice ratio of 1:2 (w/w)
to the Department of Food Technology, Prince of Songkla University,
Hat Yai, Thailand within 1 h.
