different
relative
humidities (Bell and Labuza, 2000). The Guggenheim–Anderson–de
Boer (GAB) model (Eq. (2)) was used to
represent the experimental equilibrium data. In this equation, the
parameter Xw is the equilibrium moisture (g water/g dry mass), m0
is the monolayer water content, C is the Guggenheim constant,
which represents the sorption heat of the first layer and k is the
sorption heat of the multilayers. GAB model parameters were
determined by non-linear regression, using Statistica Software 6.0
(Statsoft, USA).
